THE EXPERIENCE

Dinner at The Table embodies our commitment to proudly showing off the ingredients & people of Prince Edward Island with intention, by changing our 7-course menu top to bottom every week, and revealing it only once you arrive.

We often say we write menus backwards. Where typically you write a menu, then order the ingredients you need to cook it, we do the opposite. We start writing our menus by talking to the island’s best farmers, butchers, fish mongers, and food producers, asking them what ingredients are at their prime that week. We then use those ingredients to write the menu — literally flipping the usual process backwards.

Doing this allows us to ensure we’re only ever using the absolute best ingredients the island has to offer us in any given week.

We feel very fortunate to share the best of PEI with our guests each evening. As each course leaves the kitchen, our chefs will take the time to share the story of each dish and the people behind them.
