The Chef's Table experience embodies our commitment to community by serving each of our guests the most authentic and fresh version of Island cuisine imaginable. It has been crafted to ensure our award-winning Executive Chef, Hunter Guindon, has the creative freedom to shape dishes that are entirely inspired by the bounty of ingredients available for harvest throughout the season; the very food that has made Prince Edward Island Canada's Food Island.
To achieve our culinary vision, a new seven-course menu is created each week and revealed to you only when you arrive. With only 27 seats available at a single seating each night, our guests can delight in knowing that their spot for a truly unique, one-of-a-kind experience is reserved and revel in the anticipation of what's to come. With a focus on the freshest of fresh Island seafood, artisanal butchery, foraged foods, and hyper-local produce, you can have confidence that every dish will be your new favourite.
Each of The Chef's Table menus features meticulously crafted dishes of ingredients from land and sea, expertly prepared in our open-concept kitchen and presented by Executive Chef Hunter. The dining experience includes an introduction to each dish, details about the farmers, fishers and producers responsible for providing each ingredient, insight unto culinary inspirations, and personal table-side visits by the Chef. The Table is proud to offer the Island's only all-Canadian beverage menu and an all-Canadian wine flight that is perfectly paired to complement your culinary experience.
